A millennial-friendly version, but with a Christmas soul (and zero dirty dishes)

Sometimes, I fantasize about being a Venezuelan version of Ina Garten (with more Caribbean flavor and less expensive dishes). I treat my friends or family to a delicious and elegant dinner. I've made this recipe at Christmas, for birthdays, and even "just because"… because there are days when you deserve a beautiful and tasty dinner without dying in the attempt.

What I like most about this dish is that it cooks itself while you do other things, like taking a shower, playing soft music, or having a good conversation. Plus, you don't make much of a mess, which is worth its weight in gold. However, if you want the flavor to be excellent, start marinating it the night before (important!) or at least 6 hours before. And if you can, give the loin a few skewers so it absorbs all that love.

Ingredients:

• 1 kilo of pork loin

• 1 tablespoon of onion powder

• 2 garlic cloves

• 1/2 teaspoon of garlic powder

• 2 tablespoons of mustard

• Salt and pepper to taste

• 1 tablespoon of oregano

• 1 teaspoon of paprika

• 2 tablespoons of olive oil

• 2 apples, peeled and diced

Materials you'll need:

• 1 large bowl (for marinating the meat)

• 1 measuring cup (for mixing the seasonings)

• 1 cutting board

• 1 sharp knife (for mincing the garlic and apples)

• 1 kitchen spoon or spatula (for mixing and spreading the mustard)

• 1 large skillet (for searing the meat)

• 1 baking sheet

• Aluminum foil (for covering the meat in the oven)

• 1 oven (preheated to 350°F or (200°C)

• 1 sharp knife for slicing at the end

• A nice serving dish (served with mashed potatoes, salad, or whatever you fancy)

My photo. I must remember to take more photos for my next recipes. Google Photos only shows me five identical photos.

Step by Step:

1. Preheat the oven to 350°F (200°C) and combine all the dry seasonings in a mug. Mix well and set aside.

2. Finely chop the garlic cloves.

3. In a large bowl, place the tenderloin and sprinkle all the dry seasonings evenly over it.

4. Add the minced garlic and olive oil, then spread the mustard over the tenderloin.

5. Cover the bowl and let it marinate overnight (or at least 6 hours).

6. sear the tenderloin on all sides in a very hot skillet. Just a few minutes on each side to get a golden brown.

7. Place the seared pork loin, marinade juices, and chopped apples on a baking sheet.

8. Cover with foil and bake for 2 hours.

9. Remove from the oven, let it rest for 10 minutes, slice carefully... and that's it!

This dish is spectacular with mashed potatoes, a green salad, or roasted vegetables.

And when your guests ask for the recipe, tell them: "It's from AndyLife."
